Raw Vanilla - Blueberry Chia Pudding Parfait

Another quick and easy, yet impressive looking breakfast, snack or dessert. Reap the many benefits of chia seeds by including them in ice cream, bread, pudding, salad, crackers, etc. I plan on serving this lovely parfait to many dinner guests that are not familiar with RAW, and I'm sure they'll love it.

If you are not a fan of coconut, neither of us think this tastes like coconut at all. Young coconut meat gives it a nice creamy body and base, but you taste the vanilla and blueberries...that's it!!!

Raw Vanilla - Blueberry Chia Pudding Parfait

Vanilla - Blueberry Chia Parfait
Serves: 6
1 1/2 cups Young Thai coconut meat
1 1/2 cups coconut water (or filtered water)
1 1/2 cup cashew, soaked 2-4 hours
5 drops Medicine Flower Vanilla Extract (1/2 - 1tsp liquid extract)
3 Tbsp honey (or yacon syrup) per taste

pinch of sea salt
1 tsp sunflower lecithin (optional)
2 drops Medicine Flower Blueberry Extract (optional)
1 1/2 cup blueberries
1/4 cup +2 Tbsp chia seeds (add as needed)

Blend coconut, coconut water and cashews until very creamy.

Add vanilla, salt, sweetener, lecithin, and blend.

Pour half of mixture into a bowl.

Add blueberries to mixture in blender and mix until creamy.

Pour into a separate bowl.

Add 2 - 3 Tbsp of chia seeds to vanilla mixture, stir and let set.

Add 1/4 cup of chia seeds to blueberry mixture, stir and let set.

Let sit about 15 minutes, stirring once or twice.

Spoon layers into a parfait glass. Refrigerate for 30 minutes or more and serve.

Bread pudding is a delicious staple in the south. And 'perfect to serve with coffee with friends. If you served after a meal or just a special occasion, this recipe for bread pudding with lemon sauce is sure to please. In a hurry? Try this easy banana pudding.

Bread pudding with lemon sauce
2 cups dry bread cubes
4 cups milk, scalded
1 tablespoon butter
1 / 4 teaspoon salt
3 / 4 cup sugar
4 eggs, lightly beaten
1 teaspoon vanilla extract

Dipthe bread in milk for 5 minutes. Add butter, salt and sugar. Pour the beaten eggs slowly bread. Add the vanilla and mix well. Pour into greased pan. Bake in a hot pan in the oven at 350 degrees until custard is firm, about 50 minutes. Serve hot with lemon sauce.

Lemon Sauce:

1 / 2 cup sugar
1 tablespoon cornstarch
1 / 8 teaspoon salt
1 / 8 teaspoon nutmeg
1 cup boiling water
2 tablespoons butter
1 1 / 2 tablespoon lemon juice

In saucepan 1 / 4,Mix sugar, cornstarch, salt and nutmeg. Gradually add water and simmer until thick and clear. Add butter and lemon juice, mix well. Pour over bread pudding.

EASY BANANA PUDDING
3 cups cold milk
2 packages (4 servings each) instant banana mix sweet and pie filling
About 30 vanilla wafers
3 medium bananas, sliced
August 1 ounce mounted frozen topping, thawed

Pour milk into large bowl. Addpudding, milk mixture and beat with whisk 2 minutes or until well blended. Let stand 5 minutes. Place vanilla wafers on the middle of the bottom and sides of a dish. Add layer of sliced ​​bananas and milk, ending with pudding. Spread topping over pudding mounted. Refrigerate until serving time.

Note: To prevent the color change bananas, dip in lemon juice or pineapple juice before the pudding layer.
