Two Simple Cupcake Recipes for Beginners

Every cupcake baker needs to start somewhere. These two recipes are for everyone's favorite flavors: chocolate and vanilla! Some people might find these flavors to be boring, but I think they are perfect! Additional ingredients can always be added to fancy them up and the "plainness" of the flavors allows for the use of more interesting frosting.

This chocolate recipe has been in my family forever and it is absolutely the best chocolate cake I've ever had. And as an added bonus, there are no eggs in the batter so feel free to lick the bowl!

No Eggs Chocolate Cake

Two Simple Cupcake Recipes for Beginners

3 c. all-purpose flour
2 c. granulated sugar
2 tsp. baking soda
½ tsp. salt
8 Tbsp. cocoa
2 c. water
2 Tbsp. apple cider vinegar
2 tsp. vanilla
¾ c. canola oil

Preheat the oven to 350 degrees. Line your cupcake tin with paper liners.

In a large bowl, sift together the first five ingredients. Put the remaining ingredients in the large bowl of a stand mixer. Beat until well blended, about 1-2 minutes. Gradually add the dry ingredients until well combined. Pour the batter into your prepared pan. Bake for 20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely before frosting.

This next recipe is for vanilla cupcakes. I love a vanilla cupcake because they are so versatile! You can add any flavor frosting to make it more interesting. You can also add in additional items to the batter, like sprinkles or finely chopped fruit, and it completely transforms the cake.

Vanilla Cupcakes

1-3/4 c. cake flour, not self rising
1-1/4 c. all-purpose flour
2 c. sugar
1 Tbsp. baking powder
¾ tsp. salt
2 sticks unsalted butter, cut into 1" pieces
4 large eggs
1 c. whole milk
1 tsp. vanilla extract

Preheat the oven to 325 degrees. Line you cupcake tin with paper liners.

In the bowl of a stand mixer fitted with the paddle attachment, combine flours, sugar, baking powder, and salt. Mix on a low speed until combined. Gradually add the butter until just coated with flour.

In a medium bowl, whisk together eggs, milk, and vanilla. With the mixer on a medium speed, gradually add this mixture in three parts. Beat until the ingredients are incorporated, but don't overbeat.

Fill the cupcake liners until they are 2/3 full. Bake, rotating the pan halfway through, for about 15-20 minutes, or until a toothpick inserted in the center comes out clean.

Allow cupcakes to cool completely before frosting.

Kid's Cupcake Recipes

Cup cakes are a favorite treat for kids of all ages. Cupcakes can be decorated for all seasons and reasons. These are quick, easy cup cake recipe that kids can prepare with the help of an adult.

These cupcakes could always be made starting with a boxed cake mix. But where is the fun in that? With these recipes, you and the kids start from scratch and create memories as well as some delicious mouth watering treats.

Ingredients:

3½ oz. softened butter 3½ oz. softened cream cheese 2 tsp. finely grated lemon rind 2/3-cup superfine sugar 2 eggs ½ cup all-purpose (plain) flour 1/3 cup self-raising flour
Instructions:

1. Pre-heat oven to 325F

2. Line a 12-cup muffin pan, with cupcake papers

3. Beat the butter, cheese, lemon rind, sugar and eggs until smooth and creamy

4. Sift the flours together

5. Add the flour gradually to the cheese mixture
6. Beat on a low speed, until just combined

7. Divide the mixture evenly between the 12 muffin tins

8. Bake for 25 minutes until firm to touch

9. Allow to cool for a few minutes and then transfer to a wire rack

Yields: 12 cupcakes

Frost with purchased lemon frosting. Enjoy

Basic Vanilla CupCake Recipe

Ingredients:
*5 oz. Butter - softened *5 oz. superfine sugar *6 oz. self-raising flour *3 eggs *1 tsp. vanilla extract
Instructions:

1. Preheat the oven to 350F

2. Line a 12-cupcake pan, with cup cake papers

3. Crack the eggs into a cup and beat lightly with a fork

4. Place all the ingredients in a large bowl

5. Beat with an electric mixer for 2 minutes, until light and creamy

6. Divide the mixture in the muffin pan

7. Bake for 18-20 minutes until risen and firm to touch

8. Allow to cool for a few minutes and then transfer to a wire rack

9. Allow to cool fully before applying the frosting

Yields: 12 cupcakes

Frost with purchased vanilla frosting. Enjoy

Santa Magdalena
Frost cupcake with white frosting. Sprinkle top with sugar or red splashes of red. Take two eyes M & M or other candy. Make a mini marshmallows or coconut shaving. This is a child Santa can ultimately fun and easy to assemble.

Reindeer cupcake
Frost cupcakewith chocolate. Add pretzels for antlers and M & M candies for eyes and nose.

Turkey Cupcake
Use candies, skin cut fruit or biscuits and slices standing up for their feathers. Add eyes and beak.

Cupcake Creations
Only for decoration in various colors and layouts especially sweet you can create masterpieces.

Frost cupcakes with the same color. Examples of these could be the location of cupcakes 4-5 in a wavy line to form a caterpillar. Give first cupcakeeyes and antennae.

Or the way cupcakes on a tree. Start with the top and two on the next line, three on the next line, etc. (as if you were a pyramid shape) Frost cupcakes tops brown and green funds for the trunk.

More cake designs may be configured to form a cake butterfly, flower, flag, the ball. Using the color nail polish to match the design. Another popular idea is now to put a design and frost cupcakes together as if they werea large cake. This is often called a cake to separate from the muffins.

Zucchini chocolate cupcake recipe
1 1 / 4 cups sugar
1 cup sour cream
Vegetable oil 1 / 2 cup
2 eggs, beaten
1 / 3 cup unsweetened cocoa powder
1 / 4 cup milk
2 teaspoons baking powder
1 1 / 2 teaspoon ground cinnamon
1 teaspoon baking soda
1 / 2 teaspoon salt
2 1 / 3 cups flour
1 cupgrated zucchini
1 cup milk chocolate chips, optional

Prepare pans and preheat the oven to 400 degrees. In a mixing bowl, mix the sugar, sour cream, oil, eggs, cocoa and milk. Add cinnamon, salt, baking soda and baking powder. Mix. Add flour, zucchini and chocolate chips until well blended. Pour into pans and bake 25 minutes or until a toothpick inserted in center of cupcake comes out clean.
