Baked Stuffed Chicken Casserole

5-cups

Chicken flavored dry stuffing mix

2-cups

Cheddar cheese, shredded

1-small

Onion, finely chopped

Instructions:

Combine smoked chicken & corn chowder soup, chicken flavored dry stuffing mix, shredded cheddar cheese and finely chopped onion in a large mixing bowl; pour into a 9x13-inch pan and bake at 350° for 15 to 20 minutes or until golden brown. Let stand for five minutes before serving.

Serves 6

Note: This is one of the most delicious recipes, but yet so simple. This can be made with any of the chunky cream based soups. I have also substituted the onion with chopped pecans, diced green chilis or bell peppers. There's many combinations that work to your taste. The above combination is my favorite.

Another great idea is to divide up into single serving dishes and freeze. This makes a great quick meal after a long work day.

In a large bowl, mix the egg yolks, milk, spices andflour.

In large (the other) bowl, beat egg whites until stiff, then gently stir the mixture of egg yolk. Pour over the results of the pot.

PRISA COUNCIL: I do the version 3 eggs and separate the eggs - mix em and it works very well.

Bake at 350 degrees for 45 minutes. Spoon over hot sauce to taste and cook another 15 minutes.

Let stand for five minutes before serving. It 'is also excellent served cold. It's a lot! Wrap a piece of tortillaperformed in a working lunch, or serve with Spanish rice and refried beans for a nice dinner.
