So what is your favorite summer time treat? Is it ice cream or milkshakes? Or maybe you prefer limeades or ice cold sodas, or maybe even chilled pies or cakes there is plenty to choose from.

Fruits make for great summertime treats particularly if they are served as cold or frozen desserts. There are many fruit-based cold desserts that you can make and enjoy during the summer months for yourself, your family, and friends. These great fruit-based summer treats can be anything from a simple fruit cup, which takes no more time than what is required to chop up the fruit and chill it, to creations that require a good deal of time preparing and even baking before they can be served and enjoyed. While most summer desserts are not the healthiest due to certain ingredients they can none the less be nutritious.

What You will Need:

1 angel food cake (10 in) 4-5 cups strawberries (sliced, fresh) 1 cup sugar (white) 16 ounces cream cheese (softened) Cool whip (16 ounces) 2 packages strawberry glaze (1 ounce per package) you can substitute 2 boxes sugar-free strawberry jello mix for the strawberry glaze 5-6 strawberries (fresh for garnish)

How To Make It:

First, you need to break up the angel food cake into small pieces.

The next thing you need to do is to cook the strawberry glaze or sugar-free strawberry jello using their directions, and once this done, add the sliced strawberries then set this aside. Now you will need to beat the sugar with the cream cheese folding in the cool whip afterward.

Next, take a large trifle bowl and place half of the angel food cake pieces into the bottom.

This is when you spoon about half of the cream cheese, sugar, cool whip mixture on top of the angel food cake in the bowl. At this point you add approximately half of the strawberry mix on to the cream cheese, cool whip, and sugar mix.

Repeat this procedure for all 3 layers of the dessert. Chill for 3 or 4 hours after garnishing with the whole berries and cool whip. When preparing this dessert a 9x13 pan may be substituted for the trifle bowl.

Recipes include Homemade Peach Ice Cream, a real treat for anyone who loves peaches. The Lazy Pie Crust recipe is ideal for anyone who has trouble rolling out pie crust or some of the newer cooks who don't even own a rolling pin! The Jiffy Black Walnut Cake is a very old recipe from a little town in Missouri. My uncle married a gal from Missouri when he was stationed at Ft. Leonard Wood during the Korean War. She was an excellent cook who brought a lot of her friends and family's recipes to our family in Southern Indiana. I loved riding my bike to her house and just happening to arrive at meal time!

HOMEMADE PEACH ICE CREAM
4 cups fresh peach puree
4 cups half and half cream
2 cups whipping cream
1 cup sugar
1 can sweetened condensed milk
2 tablespoons lemon juice

Food Stand Mixer

Combine peach puree, lemon juice, and sugar; stir until sugar dissolves. Add the chilled creams and sweetened condensed milk. Pour the mixture into the freezer can of ice cream freezer and follow your ice cream freezer's directions.

LAZY PIE CRUST
1 1/2 cups all-purpose flour
1/2 tsp salt
2 tsp sugar
1/2 cup oil
2 tbsp milk

Preheat oven to 350 degrees.

Combine the flour, salt, and sugar in the pie pan, mix with a fork. Add the milk to the oil and stir together. Pour over the flour mixture and stir with the fork until well mixed and crumbly. Press evenly in the pan to form a shell. Use as any other pie crust. Fill and bake or bake and fill for cream pies. To use for fruit pies, save back part of the crumbs and sprinkle over the filling and bake as any other fruit pie. Baking time is till crust is brown, about 30 to 35 minutes.

JIFFY BLACK WALNUT CAKE
2 cups sugar
2 sticks butter, softened
2 cups sifted all-purpose flour
5 large eggs
1/4 tsp salt
1 cup black walnut halves
1 tsp lemon extract
1 tsp vanilla extract

Combine all the ingredients into a large mixing bowl and beat at high speed of an electric mixer for 5 minutes. Pour the batter into a well-greased tube pan (10-inch size) and bake for 1 hour and 15 minutes at 350 degrees.

Refrigerate for at least an hour before cutting to serve. Before serving, garnish with fresh blueberries.

EASY homemade ice cream
6 wholeeggs
1 1 / 2 cups sugar
3 cans of condensed milk
9 cups of milk
1 1 / 2 teaspoon vanilla extract

In a large bowl, combine eggs, sugar and condensed milk. Stir in vanilla and milk. Pour the mixture into ice cream freezer according to the instructions of your particular freezer. Serve this vanilla ice cream with a variety of sauces and seasonings, if desired.

* You can change the taste of vanilla ice cream with the otherflavor extracts such as banana, maple, lemon, etc.
