Chocolate-covered dried fruit creams
1 can (14 ounces) sweetened condensed milk
3 / 4 cup butter flavored shortening
2 teaspoon vanillaextract
Pinch of salt
1 cup finely chopped walnuts
8-9 cups powdered sugar

Moisten a tray of eight or nine inches square with nonstick cooking spray. Set aside.

In a large bowl, combine condensed milk, margarine, vanilla extract and salt. Stir in nuts. Stir in powdered sugar until mixture is very stiff. Press mixture into prepared pan and coolthoroughly. Cut into 64 small squares. Remove the pieces from the pan and set aside on waxed paper.

To coat, melt chips and shortening on top of a water bath at low heat, stirring constantly. Remove from heat when melted. Dip caramel squares into chocolate mixture to coat. Place on a baking sheet that has been lined with greaseproof paper. Let stand until coating is set.

CHOCOLATE FUDGE QUICK
1 / 2 cup of corn syrup, light
1 / 3 cup evaporatedmilk
2 packages (8 ounces each) semisweet chocolate
2 teaspoon vanilla
Sugar 3 / 4 cup pasta, sifted
1 cup chopped walnuts, optional

Butter 8 x 8 x 2 inch pan. 2 / 4 In saucepan, mix corn syrup and milk. Add the chocolate and cook over medium-low, stirring constantly, until chocolate is melted. Remove from heat. Add the vanilla and add sugar. Beat the mixture with a wooden spoon until smooth. Stir in nuts, if desired. Spread the sweetprepared pan. Chill 2 hours or until firm.

CHOCOLATE ORANGE FUDGE
3 cups sugar
1 / 2 cup water
1 / 2 cup orange juice
1 package (12 ounces) dark chocolate
1 tablespoon orange peel
2 cups chopped walnuts or pecans

Three quarters in a saucepan combine sugar, water and orange juice. Cook over medium heat, stirring until sugar is completely dissolved. With a cooking thermometer, cook the mixture, without stirring, until temperature reaches 234degrees or soft ball stage.

Remove from heat and whisk in chocolate until well blended. Stir in orange peel and nuts. Spread the caramel in a pan lined with aluminum. Chill until set. Turn from pan, remove foil and cut into squares. Keep candy stored in a cool, dry place.
