Bark quiche with spinach and mushrooms

Ingredients:
10 oz fresh spinach, washed and stems removed
6 oz fresh sliced mushrooms
2 eggs, beaten
8 oz cholesterol-free egg substitute, thawed
1 / 2 cup grated Parmesan cheese
1 / 2 cup skim milk
1 / 2 teaspoon dried tarragon
Freshly ground pepper
1 / 2 teaspoon salt
Vegetable cooking spray
Makepreheated oven at 350 degrees F
Using only the water that clings to the leaves of spinach, the spinach is wilted and then remove with a slotted spoon, squeeze all the liquid and set aside. Take the mushrooms and cook until the liquid left over soft (about 3 minutes) and when done, drain the liquid and add the spinach to the mushrooms.
In a bowl, beat eggs and egg substitute. Add the Parmesan cheese, milk, tarragon, salt and pepper. Add the mixture of spinach and mushrooms andmix.
The layer of sheet pan with cooking spray, pour the mixture and bake 30 minutes or until center is set to 35. Let stand at least 10 minutes before cutting the cake.

Easy Spinach Croissants
Ingredients:
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
4 ounces feta cheese, crumbled
6 croissants, split in half
3 slices of Swiss cheese, halved diagonally
Get the oven preheated to 425degrees F
In a bowl, mix the spinach and feta cheese. Place the bottom half of the croissant on a baking sheet. Pour the mixture over the croissant. Place a piece of Swiss cheese on top. Cook until the cheese is bubbly. Remove from oven and cover with top half. Serve hot.
