When we think of cookies, our minds seem to automatically think of oatmeal cookies. For most of us, they have been a part of our lives since we were kids. And if we are going to indulge in cookies, why shouldn't we turn to the ones with the healthy ingredient of oatmeal? The Oatmeal Apple Cookies, in particular, are chocked full of healthy ingredients. You have apples, oats, and walnuts, all known for healthy nutritious properties. The following recipes will allow you to venture out of the ordinary and into a new realm of oatmeal cookies. Try these Oatmeal Apple Cookies and the Oatmeal Butterscotch Cookies for a new delightful treat. Hint: These are great in the lunch box.

OATMEAL BUTTERSCOTCH COOKIES

Food Stand Mixer

3/4 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 eggs
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
3 cups quick-cooking oats, uncooked
1 pkg (10-oz) butterscotch chips

Preheat oven to 375 degrees.

In a large mixing bowl, beat butter, granulated sugar and brown sugar until well blended. Add eggs and vanilla; blend thoroughly. Stir together the flour, baking soda, salt, and cinnamon; gradually add to the butter mixture beating until well blended. Stir in the oats and butterscotch chips; mix well. Drop by teaspoonfuls onto ungreased cookie sheets. Bake at 375 degrees for 8 to 10 minutes or until golden brown. Cool slightly; remove from cookie sheets to wire racks. Cool completely.

OATMEAL APPLE COOKIES

3/4 cup butter-flavored shortening
1 1/4 cups firmly packed brown sugar
1 egg
1/4 cup milk
1 1/2 tsps vanilla
3 cups quick-cooking oats
1 cup all-purpose flour
1 1/4 tsps cinnamon
1/4 tsp nutmeg
1/2 tsp baking soda
1/2 tsp salt
1 cup peeled, diced apples
3/4 cup raisins, optional
3/4 cup walnut pieces, optional

Preheat oven to 375 degrees. Grease baking sheets and set aside.

Cream shortening, brown sugar, egg, milk and vanilla at medium speed of an electric mixer for 1 1/2 minutes. In a small bowl, combine flour, cinnamon, nutmeg, baking soda, and salt. Beat into the creamed mixture with the mixer on low speed until well blended. Stir in the apples, raisins and nuts, if using. Stir in the oats. Drop the mixture by rounded tablespoonfuls on the prepared baking sheets. Bake at 375 degrees for 13 minutes. Cool 2 minutes on the baking sheet. Then remove the cookies to a wire rack to finish cooling. Makes about 2 1/2 dozen cookies.

Yield: Apprx 4 dozen

The recipes in this article cover a variety of dessert options. But all are old fashion recipes that can still be the star of your dessert recipe files. Recipes include Homemade Peach Ice Cream, a real treat for anyone who loves peaches. The Lazy Pie Crust recipe is ideal for anyone who has trouble rolling out pie crust or some of the newer cooks who don't even own a rolling pin! The Jiffy Black Walnut Cake is a very old recipe from a little town in Missouri. My uncle married a gal from Missouri when he was stationed at Ft. Leonard Wood during the Korean War. She was an excellent cook who brought a lot of her friends and family's recipes to our family in Southern Indiana. I loved riding my bike to her house and just happening to arrive at meal time!

HOMEMADE PEACH ICE CREAM
4 cups fresh peach puree
4 cups half and half cream
2 cups whipping cream
1 cup sugar
1 can sweetened condensed milk
2 tablespoons lemon juice

Food Stand Mixer

Combine peach puree, lemon juice, and sugar; stir until sugar dissolves. Add the chilled creams and sweetened condensed milk. Pour the mixture into the freezer can of ice cream freezer and follow your ice cream freezer's directions.

LAZY PIE CRUST
1 1/2 cups all-purpose flour
1/2 tsp salt
2 tsp sugar
1/2 cup oil
2 tbsp milk

Preheat oven to 350 degrees.

Combine the flour, salt, and sugar in the pie pan, mix with a fork. Add the milk to the oil and stir together. Pour over the flour mixture and stir with the fork until well mixed and crumbly. Press evenly in the pan to form a shell. Use as any other pie crust. Fill and bake or bake and fill for cream pies. To use for fruit pies, save back part of the crumbs and sprinkle over the filling and bake as any other fruit pie. Baking time is till crust is brown, about 30 to 35 minutes.

JIFFY BLACK WALNUT CAKE
2 cups sugar
2 sticks butter, softened
2 cups sifted all-purpose flour
5 large eggs
1/4 tsp salt
1 cup black walnut halves
1 tsp lemon extract
1 tsp vanilla extract

Combine all the ingredients into a large mixing bowl and beat at high speed of an electric mixer for 5 minutes. Pour the batter into a well-greased tube pan (10-inch size) and bake for 1 hour and 15 minutes at 350 degrees.

March 1 / 2 to 4 pounds Rump Roast

A bag of baby carrots Court

3 large onions

5 potatoes

1 can cream of mushroom soup

1 packet of French Onion Soup Mix

1 / 4 cup water

Place roast in crockpot rump. Place baby carrots around it. Chop the onions into quarters.Cut the potatoes into small pieces and place around meat. Add the mushroom soup and onion soup mix. Mix water 1 / 4 cup of crockpot. Depending on how often do you like your sauce mixture you can add more water. Crockpot rather low for 8 hours. Stirring occasionally. The meat is granted the right to separation. Serve with a salad or some good garlic bread. We go back for seconds, thirds and fourths.

Moist meatloaf in crockpot

2Eggs

3 / 4 cup milk

2 / 3 cup seasoned bread crumbs

Serve with garlic mashed potatoes and your favorite vegetable, and his family was the best meatloaf ever.

2 cans chile

1 can condensed cheddar cheese soup

1 can chopped green chilies

1 can (8 ounces peach juice (not syrup), drained, rinsed and drained again
1 small package (4 serving) sugar free flavored with raspberry jelly
3 / 4 cup boiling water
1 / 2 cup cold water
3 / 4 cup sugar-free topping thawed mounted *

2 ounces white chocolate baking (made from cocoa butter), melted and cooled slightly
2-ozMilk chocolate, melted and cooled slightly
3 tablespoons chopped toasted hazelnuts or almonds
chocolate syrup, if desired for garnish

Line 9-inch pan with heavy duty foil extends up the sides of the pan aside. In a bowl, beat cream cheese in the third for 30 seconds using an electric mixer set at medium speed. Beat in dark chocolate, double in the third part of the roof, spread evenly over bottom of prepared pan. Cover and freeze 30 minutesor until firm.

While the mixture is in the freezer, in another bowl, beat another third of the remaining cream cheese with a mixer at medium speed for 30 seconds. Beat in white chocolate and a third of the coverage. Spread chocolate mixture over frozen dark. Cover and freeze another 30 minutes or until firm.

While the mixture is in the freezer, repeat the above procedure again with the milk chocolate. Once widespread in the tray, sprinkle with toasted walnuts. Coverand freeze at least 2 hours to 24 hours.

To serve, lift dessert from pan with plastic wrap. If necessary, let stand at room temperature for 15 minutes before removing from pan. Cut crosswise into 10 slices.

Thread chocolate syrup over top of wedges to serve, if desired.

TheNutrition information above is for the ingredients as directed. I would suggest, on the basis of how well diabetes is controlled, no sugar, chocolate syrup, sugar, cream and dark chocolate. However, the ratio between proteins carbohydrates is good for diabetics with the original ingredients. Use your mind!
